Parsnips are a source of food. When stunted, parsnip crops yield more than most other stunted crops.
Obtaining
Small patches of parsnips can be found while exploring, in areas with the following temperature, precipitation, and forestation.

Chunks meeting these conditions have a 1.5% likelihood of generating 0-10 parsnip crops, which might include a mix of mature and immature crops.
Surface ruins and underground ruins usually contain 1 or more cracked loot vessels, which might contain crop seeds. But none contain parsnip seeds.[1]
Parsnips and parsnip seeds may be purchased from agriculture traders.
Cultivation
Parsnip crops tolerate temperatures -10 to 32°C, but only grow when above 0°C. If the temperature drops below -10°C or exceeds 32°C, the parsnip crop will become “stunted” and begin to accumulate damage. Stunted parsnip crops will yield 75% of normal when harvested. If they accumulate enough damage to die from excessive cold or heat, parsnip crops will yield 75% of normal when harvested.
Parsnip crops consume 20 P (phosphorus) over 8 stages of growth. During stages 2-7, parsnip crops feed bees and butterflies. Parsnip crops take 2 months to mature, assuming a growth rate near 100%. Low moisture or nutrient levels can significantly delay maturation.
Each block of mature parsnip crops will yield 10-14 parsnips and 1-2 seed packets. Harvesting at stage 7 will yield 3-5 parsnips, with a 99% chance of getting 1 seed packet. Harvesting before stage 7 has a 0% chance of getting any parsnips, and a 70% chance of getting 1 seed packet.
Usage
Raw parsnips grant 100 vegetable satiety when eaten. Parsnips qualify as a vegetable for cooking recipes, including in meat stew, vegetable stew, soups and porridges. Parsnips, as a vegetable, benefit from storage in ceramic storage vessels, or in cellars. They can be further preserved through pickling.
Parsnips can be put in a large trough, but neither pigs nor sheep will eat them.[2]

Notes
- Jan-Jun, if the temperature is 0-14°C at 4pm, it’s good for planting parsnip seeds.
- Parsnips are a good crop to focus on for a balanced diet. They use a different nutrient than flax and most grains, have greater cold tolerance than most crops, and have higher yield when stunted than most crops.
