Cooper's reed, or Cattails (not to be confused with the item "cattail tops") are a very important early game item for making containers, rope, and skeps. They have two drops cattail tops and cattail roots.
Catttail tops can be used to craft hand baskets to increase your inventory, as well as stationary baskets that can be placed and used as item storage.
Cattail roots can be cooked and eaten to restore satiation.
To harvest the reeds you can break them with your hands, although this destroys the roots. To preserve the roots and allow multiple harvests use a knife. By breaking the roots you can then cook them to make them edible in a pinch. You can also replant the roots, useful for making a cattail farm or for decoration.
