Pampas deer are twice as likely to appear as fallow deer.
0.003 average triesPerChunk: Fallow deer, guemal deer, chital deer, pudu deer, water deer, caribou, marsh deer, red brocket deer, moose (adult males).
0.006 average triesPerChunk: Pampas deer, taruca deer, elk, whitetail deer.
In addition to grass, shallow snow, and air, deer (including moose) can spawn on soil, sand, or gravel during runtime in light level 10 or higher. The average group size is 2, with a maximum group size of 4. The chance is 0.005.
There's no known method of preventing deer/moose from spawning. Because they can spawn in air, replacing soil etc with manmade blocks isn't likely to have any effect.
Deer might despawn if in the dark (below light level 8) for 5 minutes and at least 16 blocks away from the player.

The drop data below applies to adults, baby deer will instead drop red meat and a small hide. Male deer will also always drop their antlers.

Male deer (including moose) can grow antlers. Antlers grow on male adults starting in August, passing through several phases, and reaching full growth in mid-February. After 2 months at full growth, the antlers are shed in the latter half of April. Shed antlers can be picked up by players and placed on an antler mount made of wood.
Note that not all deer reach the maximum antler size at full growth. Mid-sized antlers are most common, and particularly small or large ones are rare. The full-grown size can vary from year to year.
Water deer do not have antlers; instead, they have tusks that are not shed, and cannot be harvested.[1]
* Water deer have tusks, but they are not collectible in-game.
As of April 2025, the elk is the only creature that can wear a saddle and be ridden by the player.
An elk calf may be captured and tamed to obtain a tamed elk, which can be controlled as a mount. Alternatively, a tamed elk may be purchased from a Treasure Hunter Trader.
In creative mode, wild elk and tamed elk are separate items.
