Cheese
Cheese is a food product made from milk through a labor-intensive process involving natural fermentation, curd separation, and ripening. As with all food preservation methods, this greatly extends milk’s shelf life but decreases its satiety with each step. Cheese, along with milk, makes up the dairy category of food.

Cheese making
Cheese making requires a bucket, barrel, milk, pickles, and salt. The halite used for salt can rarely be found throughout the world or bought from survival goods or commodities trader. The construction of a cellar is recommended, but not strictly required in cold climates.
Milk

Milk is produced by female bighorn sheep, also known as ewes, and several breeds of goats when they are lactating. This requires the player to gather a male and female and breed them: continuously providing animal feed in a trough and waiting until they have consumed enough portions to mate. A pregnant ewe has a gestation period of 20 days.
After the baby is born, the ewe will begin lactating for 20 days and can be milked by holding
with a bucket. Ewes have a chance to reject milking that decreases with every generation: there is a 95% chance at generation 0, 66% chance at generation 1, and 33% chance at generation 2, and 0% chance at generation 3. An ewe can be milked for 10L of milk every 24 hours.
Milk lasts 8 days and provides 150 dairy satiety per liter. As with all perishable items, its shelf life can be extended when stored in a cellar.
Curdled milk
To make curdled milk, the player needs to combine a specific ratio of pickled vegetables and milk in a barrel: 1 pickled vegetable can curdle 20L or 25L of milk, and 2 pickled vegetables can curdle 40L or 50L of milk. If the amounts are correct, the tool tip will indicate that the barrel can be sealed for 3 days to produce an output.
Curdled milk is fresh for 4 days and cannot be consumed.

For transferring small amounts of liquid to a barrel, you can press Ctrl + Right-Click with a filled bucket to add 1L instead of 10L. |
Cottage cheese
To make cottage cheese, add 1 piece of salt for every 5L of curdled milk in a barrel and seal it for 1 day.
Cottage cheese is fresh for 10 days and provides 140 dairy satiety per liter.
Cheese ripening
To make raw cheese, press Shift +
on a barrel containing at least 25L of cottage cheese with 1 piece of linen (any stitches) to obtain a curd bundle. Place the bundle on a solid surface, add a stick handle, and twist it to squeeze out all of the liquid. When complete, unfold the bundle and add 5 more pieces of salt to turn it into raw salted cheese.
This can optionally be combined with one piece of beeswax in the crafting grid to make raw waxed cheese, which will keep fresh for longer. The raw cheese is then placed on a shelf that meets the conditions for ripening and will finish in 14-20 days.
The shelf must have a perish speed multiplier of 0.5x or lower, as indicated by the text “Suitable spot for food ripening” on the Block info HUD. This can be achieved through low outdoor temperature or a cellar (which prevents a room’s temperature from exceeding 5°C). Note that food spoilage is calculated based on the temperature at sea level, so any temperature reduction from being at a high elevation will be nullified.


Raw cheese lasts 15 days and cannot be eaten. When temperatures rise and perish speed increases above 0.5x, the ripening process will pause. If ripening is not completed in time, the cheese will rot.
Cheddar cheese
If raw cheese is aged inside an enclosed room (a cellar is not required) or the sunlight level is 2 or higher, it will become cheddar cheese. Cheddar cheese lasts 1.2 years, and waxed cheddar cheese lasts 2.5 years.
To cut cheese into edible servings, place it on a solid surface and press
with a knife to cut a slice. Waxed cheddar cheese must first be cleared of the wax layer by pressing
with a knife. One wheel of cheddar cheese has 4 slices, each providing 240 dairy satiety, for a total of 960.
Blue cheese

If raw cheese is aged in an unenclosed space and the sunlight level is less than 2, it will become blue cheese. In other words, there are 3 conditions:
- The shelf must be somewhere that does not fulfill the technical definition of a room: an enclosed space with interior dimensions equal to or below 14x14x14 blocks. This can be a cellar with a 1-block hole in the wall (grated trapdoors and fences are regarded as an opening). Alternatively, it can be an enclosed space that is 15 blocks long. Artificial lights can still be used.

The command `/debug rooms hi` (`/debug rooms unhi` to undo) will highlight rooms in green and non-rooms in red. Make sure the shelf is not inside of a room. |
- The space must be almost completely blocked from sunlight. A 1-block hole can easily allow sunlight levels above 2, even if it is not close to a window to the outside. You can place the shelf at the end of a long corridor, build a winding corridor, or build multiple layers of walls.
- The shelf’s perish speed must remain at 0.5x without the cooling benefits of a cellar. For most climates, this is not feasible until the cold season when the temperature at sea level is 13.9°C or lower.
Blue cheese lasts 1.6 years. One wheel of blue cheese has 4 slices, each providing 200 dairy satiety, for a total of 800.
Purchasing
The agricultural trader sells 1 waxed cheddar cheese at an average price of 10 rusty gears, and 1 blue cheese at an average price of 8 rusty gears.
Usage
Cottage cheese is stored in liquid containers and provides 140 satiety per liter. Cheddar and blue cheese slices provide 240 and 200 satiety, respectively.
In cooking recipes, cheddar and blue cheese are used in cheese pie and as an optional ingredient in scrambled eggs. Unlike most ingredient types, they do not receive a satiety bonus.
